As a vegetarian, I am mindful that other people don't always have meat-free meals. So in order to accommodate some of my meat-eating friends, I tried to come up with a mostly vegetarian meal with just a small side offering for the meat-eaters.
Here is a the menu I came up with for my "ladies-only" dinner. When I've hosted dinner parties in the past, sometimes I can get carried away and end up spending half the day cooking and prepping. I wanted this dinner party to be fun and light so I went with a southern, soul food theme.
It may not be the lightest or healthiest of meals, but it sure was good. I'm still eating the leftovers nearly one-week later!
Baked mac and cheese
Roasted red and sweet potatoes
Strawberry, goat cheese and walnut salad with balsamic dressing
Shrimp with cocktail sauce
Hummus and spinach dip with crackers
Hand dipped chocolate covered strawberries
The prep and actual cooking for the dinner was maybe two hours, so not bad considering all of the food that I made.
Everyone loved the roasted sweet and red potatoes. That was probably the easiest of the dishes. I cut up the potatoes into small pieces, added olive oil, salt, pepper, rosemary, oregano and a Trader Joes Everyday Seasoning and baked for 45 minutes.
