There wasn't much prep for the dinner and it was tasty--that's always a success in my book especially when hosting a dinner on a weeknight.
After skimming several cook books, I still couldn't figure out what I wanted to serve for dessert. I was browsing Whole Foods the morning of the dinner and found several fresh Angel Food Cakes staring back at me. Yes! That's what I'll serve.
Angel Food Cake is one of those overlooked desserts that doesn't get credit it deserves and is one I frequently forget about. But it's also one of those desserts that really allows you to be creative and dress it up with a variety of fruits and sauces. I prefer dishes/desserts where there is room for creativity and not entirely bound to a recipe.
One of its best qualities is that Angel Food Cake can be filed under the "guilt-free" category because it's made with egg whites and no oils and butters. In fact, it is fat free and only a few hundred calories per serving. Granted, whichever ingredients you top it with will drastically change whether or not it still remains guilt-free.
Admittedly, I did not bake the Angel Food Cake (due to time constraints) I served but I did create a simple, low-fat, and delicious topping. All you need is a dollop or two of low fat or fat free vanilla yogurt, one container of fresh cut strawberries, and a few tablespoons of honey to drizzle over the cake. Absolutely delicious!
It's the perfect Spring dessert that really adds color to your entire meal. It's light, fun, playful, and oh, did I mention, guilt-free?
